Chef Paul Lee

Chef Paul Lee, hailing from Seoul, South Korea, brings his culinary expertise and passion for travel to The Ritz-Carlton, Hong Kong. With a rich background working in luxury hotels worldwide, including W Singapore, The Ritz-Carlton Astana, and most recently The Ritz-Carlton Tokyo, Chef Paul assumes the role of Chef de Cuisine at The Lounge & Bar. Infusing creativity and his Korean roots, he introduces innovative dishes including the Hanwoo steak menu, seamlessly blending Western and Korean flavors for a unique dining experience.


Everyday: 6:30 a.m. - 12 a.m.

Monday - Friday: 6:30 a.m. - 10:30 a.m. 
Saturday, Sunday & Public Holiday: 6:30 a.m. - 11 a.m.
